Apple Cake - Julie Thacker served this at Book Club

This recipe fills a 9x9-inch pan. Double for a Bundt Pan or 13x9-inch pan.
Cream together:
3 Tbsp. butter or margarine
1 cup sugar
Blend in:
1 egg, well beaten
1 tsp. vanilla
3 cups diced, peeled apples (1/4 inch dice)
Sift in:
1 cup all purpose flour
½ tsp. cinnamon
¼ tsp. nutmeg
½ tsp. salt
1 tsp. soda
Stir in ½ cup chopped walnuts if desired.
Turn mixture into an 8 or 9-inch square ungreased baking pan and bake at 350 degrees for 35 to 40 minutes. Serve warm or cold cut into squares and topped with whipped cream, ice cream, or a lemon sauce.
Makes 6 servings.
Note: Any variety of apples can be used but Golden or Granny Smith apples hold up well in baking.
